PAKBET (pawk-BET)
Ingredients
* 2 cups raw pumpkin or “kalabasa” (round Asian pumpkin) or any kind or orange /yellow squash, cut into 1x1x1 inch chunks.
* 2 cups long string beans cut into 1-inch lengths
* 2 cups okra, cut on an angle into 1 to 1.5-inch lengths
* ½ cup ground beef, cooked.
* Garlic (1/4 cup diced or to taste), ginger ¼ cup diced or to taste), green onions: 1 to 2 cups of 1-inch pieces.
* ¼ to 1/2 t chicken or beef bouillon cube
* A dash of salt – not much, as low-sodium is best.
* 1 cup room temp water with 1 heaping T of corn starch.
Procedure
1. Sauté the garlic and ginger in oil.
2. Add 2 cups of water. Bring to a boil.
3. Put in the SQUASH and OKRA first (takes longest to cook). Stir for 3 min or so.
4. Put in the beans, cook until all the vegetables are cooked but still firm, continuously stirring.
5. Add in the ground beef (already cooked) and the green onions along with cornstarch solution; stir until cornstarch thickens.
6. Immediately remove from the pot and place in a bowl, even if you
don’t serve it right away, to avoid overcooking. Serve with steamed
rice.
